Crockpot French Onion Soup

When your husband says “This is the best french onion soup I’ve ever had” you take a picture and share your recipe.
I often do “research” on a recipe I want to make, incorporating a bunch of different recipes (to modify for nutrients, quality of ingredients, and what we have on hand etc.), so when I hit the nail on the head, meaning it’s husband and toddler approved, I figure I better write it down! This recipe was so simple to make in the crockpot, with only a few ingredients! And let me tell you– I. Like. Simple. So when I say simple, I mean simple!  This recipe fits the bill!

Ingredients:
32 oz. Organic Beef Broth (1 carton)
2-3 lbs. onion (about 4-5 onions)
1/2 c. Raw Butter
2 tbs. Olive Oil (I actually used avocado oil)
2 tbs. Apple Cider Vinegar
1/4 c. Flour
1 tbs. White Wine (optional)
1 tsp. Crushed Bay Leaf
1 tsp. Salt
1 tsp. Pepper
Gruyere/Swiss Cheese
French Baguette

Directions:

  1. Slice onions and throw in skillet with butter and oil and sauté for about 15-20 minutes to caramelize onions
  2. In a seperat bowl, combine: flour, apple cider vinegar, and wine
  3. Dump onions into crock pot
  4. Pour in beef broth, flour mixture, salt, pepper, bay leaves and stir to combine
  5. Cook on low for 6-8 hours
  6. Ladle into oven safe bowls
  7. Dice up bread and lay on top
  8. Cover with Cheese
  9. Broil until cheese is melted and bubbly brown
  10. Enjoy!
